Teresa Parent faced obesity-related challenges for most of her life. At 600 pounds, she struggled with self-esteem, body image, and serious health issues, including diabetes, high blood pressure, and heart disease. Daily tasks were nearly impossible, and her overall quality of life suffered.

Her health journey began in 2018 when she realized she needed a holistic transformation for her mind, body, and soul. She used various tools, including a healthy diet, exercise, self-care, meditation, affirmations, and journaling. After losing 180 pounds naturally and 200 pounds through gastric bypass surgery, Teresa underwent a Fleur-de-Lis Abdominoplasty, losing an additional 47 pounds of skin. In total, she shed 430 pounds.

Knowing she couldn't eliminate her favorite foods, Teresa learned to cook and bake healthier versions. Sharing her recipes on Instagram and TikTok kept her accountable and creative. Her unhealthy relationship with food transformed into one of excitement, joy, and pride.

Her journey represents more than food; it signifies healing from a toxic relationship with it. Teresa's light now shines brighter than ever, and she sees how food has helped heal her mind, body, and soul. The recipes she shares come from love, and she hopes others feel her light and love as they prepare these dishes.

Chef Rich Eaton

With over 45 combined years as a chef & food safety instructor, Rich Eaton was 525lbs, morbidly obese, and knocking on death’s door. He had to make a change.

Rich started his journey with a personal trainer & made changes to his diet.

He began losing weight.

Knowing that he couldn’t restrict his diet long-term and be successful, Rich set off on a mission to reinvent recipes that he loved into lower-calorie, higher-protein versions that would be a sustainable part of his success.

Rich realized he wasn’t the only one that struggled with weight and their relationship with food.

In 2021, Rich became a Certified Nutrition Coach.

With his new knowledge and extensive culinary background, he worked alongside a team of nutrition professionals and created Now We're Cooking.
